Today is National Mac N’ Cheese Day!  This is one of my favorite comfort foods who so rightfully deserve its own special day.  Created with macaroni noodles, cream or milk, and of course cheese this dish can be either a side order or a main dish.  According to Wikipedia Mac N’ Cheese goes all the way back to President Thomas Jefferson when he tried it in Paris and Italy in 1793. A recipe called “Macaroni and Cheese” appeared in the 1824 cookbook “The Virginia Housewife" written by Mary Randolph.  It was made up of three ingredients:  Macaroni, Cheese, and butter layered together and baked in hot oven.

Fast forward to 2017 Mac N' Cheese has been reinvented in so many ways that I just had to try something new.  Old Chicago Pizza and Taproom - 405 WSW Loop 323 has upgraded the traditional mac n' cheese into 3 mouth watering dishes and I just had to try one of them.  The Chicken Pesto Mac is what I had for lunch today and it was delicious. It is made with pesto sauce, blended with creamy white cheddar cheese with corkscrew macaroni, broccoli, and grilled chicken topped with aged white cheddar and buttery toasted bread crumbs, and garnished with chopped parsley.  They also have other dishes like Beer Brat Mac, Sicilian Pepperoni Roll Mac and you can even “Craft Your Own Mac N’ Cheese”.
