Crock-pot cooking is probably the easiest cooking you can do where little effort reaps big-tasty rewards! One of my favorite recipes is for easy, cheesy crock-pot enchiladas. Delicious, and so simple to prepare, you can teach your kids how to make this. Try it this week!

 

You Will Need:

1 lb lean ground beef
1 cup onion (diced)
12 cup green pepper (chopped)
1 12 cups kidney beans (don't drain)
15 oz. diced tomatoes (don't drain)
13 cup tomato sauce
2 tsp. chili powder
12 tsp. ground cumin
14 tsp. black pepper
12 tsp. salt (taste)
2 c. shredded Mexican cheeses
6 whole low-fat flour tortillas

Directions:

Brown your lean ground beef in skillet with onions and green peppers. Place mixture and browned ground beef, along with beans, tomatoes, tomato sauce, cumin, salt, pepper, and chili powder and cook in skillet on low / medium heat for about 10 minutes.

Add about 3/4 cup of your meat mixture in the bottom of your crock pot top with a tortilla. Layer with cheeses. Keep repeating this pattern 4-5 times and top with remaining meat mixture. (For a bit of spice, I top my enchilladas off with 2 cans of rotel after about 5 hours of cooking.)

Cover and cook on LOW heat for 6-8 hours.

Serves 15-18.
