Fall is here and it's time to get those crock-pots out! For delicious and easy recipes that don't keep you on your feet in the kitchen all day preparing, look no further! These easy and very tasty recipes will keep you a cooking hero, and give you a bit of a break too! Today, I'm sharing my recipe for easy Chicken Tortilla Soup! Yummy.My chicken tortilla soup is so easy, a kid could make it! Plus, it will last for several days! Make one day for dinner, and enjoy it again for lunch! Also, great for weekend comfort soup on cold days.

You Will Need:

3 cups of chicken broth
1 1/2 cups cooked chicken
1/2 onion
1 cup frozen roasted corn
2 green onions
1 (28oz) can of tomatoes and juice
1 cup chopped up vegetables that you have on hand
4 cloves of garlic
1/4 Tbs crushed red pepper flakes
1/2 Tbs cayenne pepper
1 Tbs cumin
Salt to taste

Optional Garnish:
Tortilla chips
Parmesan cheese or Mexican cheese
Sour cream
Avocado (sliced)
Prep:
Dice all veggies into fine chunks and place everything into the crock-pot
Cook on low heat for 8-10 hours, or high for 6 hours.
That's it! This recipe is delicious and you can just double the ingredients to make more! This recipe also freezes well, plus you can eat from it for several days! Kids love it!
