Not a cook, but still wanna shine at holiday gatherings? I got you!  It's no secret that I am not the "slave-over-a-hot-stove-for-several-hours-down-home-cookin-kinda-chick". However, you can look at my family and tell they've never missed a meal. That's because I've mastered what I like to call "Cooking for non cooks".  It's cooking done simple and easy with a few shortcuts.

So, if you're not a cook, DO NOT FRET this holiday! We're in this thing together.  Throughout the holiday season, I'm going to share with you some of my favorite clutch recipes I pull off every year that keep my family smiling!

Now first things first... If you're not a cook, leave the heavy hitting holiday foods like cornbread dressing, sweet potato pie, greens and hot water cornbread to the REAL cooks like my mom, grandmother and my daughter. However, I still shine because I choose to contribute casseroles. My chicken spaghetti is ALWAYS  a hit, and yours will be too if you follow my simple "Cooking for the non-cooks" recipe below.

Ingredients:

  • 1 rotisserie chicken (2 depending on how many people you're feeding) - SHORTCUT
  • 1 container of pre-chopped bell pepper - SHORTCUT
  • 1 container of pre-chopped onion - SHORTCUT
  • 1 can of cream of mushroom soup
  • 1 can of cream of chicken soup
  •  1 block of Velveeta cheese
  • 1 bag of shredded cheese (buy according to your preference)
  • 1 box of long spaghetti
  • 8 oz of cream cheese

Prep:

Debone chicken. Set aside in a bowl.  Cook spaghetti noodles al dente. Wash in cold water, drain, coat with butter or olive oil and set aside. Cube Velvetta cheese into 1/2 inch cubes. Melt Velvetta Cheese with cream cheese, cream of chicken and cream of mushroom in pot.  Add milk based on desired consistency.   In sauce pan, saute the bell pepper and onion in butter.  In large pot, add chicken, cheese mixture, bell pepper and onion together, and let cook together for about 15 minutes. Once ready, in serving dish add the mixture and noodles together and mix well. Top with shredded cheese. Bake at 350 degrees for about 45 minutes or until bubbly and VIOLA!!
