Cooking meals in your crock-pot has to be one of the easiest things you can do to serve a delicious homemade meal that doesn't take all day to prepare. If you love the taste of the islands, this recipe will knock your socks off! Flavorful, Caribbean Chicken is one of my favorite things to eat, and this recipe is so easy, anyone can do it!

You Will Need:

6 boneless, skinless chicken breasts
2 tablespoons olive oil
8 potatoes, peeled and cubed
6 tomatoes, chopped
2 onions, minced
2 green bell pepper, diced
2 cloves garlic, minced
2 ts. black pepper
2 tbs. brown sugar
2 ts. ground ginger
1/2 ts cayenne pepper
1/2 ts dried thyme
1/2 ts salt
1 c. (low sodium) chicken broth
3 c. coconut milk

Directions:

First, brown chicken in skillet over medium heat. Place chicken in crock-pot using a slotted spoon. Add cubed potatoes and diced tomatoes to your crock-pot.

Next, in your skillet, add minced onion, garlic, green pepper, brown sugar, cayenne pepper, salt, thyme, ginger, and sautee over medium-high heat for 2-3 minutes.

Slowly add chicken broth into the skillet with your mixture. Stir for a minute, then add to your crock-pot.

After all ingredients are in crock-pot, let cook on LOW heat 6-8 hours.

After cooked, slowly add the coconut milk and allow to cook in crock-pot for an additional 30 minutes (still) on LOW heat.

This recipe serves 8-10.

Serve with rice, grilled veggies, or even in tortilla shells. Top it off with pineapple for extra flavor!
