I remember growing up my mother always made warm, delicious chicken and dumplings from scratch during the Fall. Well, I love to cook any meal from scratch, but with a 14 month old little girl and a full time career, I don't always have the time. I've created a simple and very delicious version of my mother's chicken and dumpling recipe that you can cook in a crock-pot! Save time and eat hardy with this recipe! Enjoy.

You Will Need:

3 lbs. chicken
1 chopped stalk celery (or you can use celery flakes)
1/4 c chopped onion or 1 tbsp. minced onion
4 chicken bouillon cubes
Salt and Pepper to taste
4 c water
2 c Bisquick
2/3 c milk

Directions:

Place all ingredients in your crock-pot. Put on low heat for 6 to 8 hours. Remove chicken from crock-pot; pour broth into Dutch oven or large pan and bring to boil.

Use Bisquick recipe to make dumplings.  Add to your broth. While dumplings are cooking, shred  meat off chicken bones using two forks.

Combine chicken and dumplings. Don't stir too hard! You don't want to make dumplings gooey.

This will serve about 10-12.
