Crock Pot Cooking – Creamy Spinach Artichoke Dip
Mmm! What's a great appetizer that is always a hit when guests are over? Cheesy, creamy, Spinach artichoke dip! This quick and easy recipe will have your party-goers wanting more!
You Will Need:
14 oz. can artichoke hearts (drain all water, then chop)
9 oz bag baby spinach (chopped)
1 cup shredded mozzarella cheese
1 cup shredded Parmesan cheese
1/2 cup sour cream
1/2 cup mayonnaise
Optional: 3 Tbs. jalapeno slices, chopped
Directions:
In a 4-quart crock pot, add drained, chopped artichoke hearts. Add chopped spinach, removing stems.
Next, add mayo, sour cream, and chopped jalapenos. Top with 1/2 cup each shredded mozzarella and Parmesan.
Cover and cook on low for 2 hours, or high for 1 hour. Stir. Watch for spinach to break down.
When the spinach is totally wilted, take the lid off and add the other 1/2 cup of each cheese, and let it melt while the lid remains off.
Serve with your tortilla chips, or toasted french bread!
Optional garnish: Serve from King's Hawaiian bread bowl!
