Memorial Day is a time of remembering those who have sacrificed much of themselves for our country. Southern celebrations of remembrance have spawned into spending the holiday with loved ones and friends - and GREAT food! Hot 107.3 Jamz has some amazing cooks who are sharing their secrets behind the grill and stove with you! Bon appetite!


SANGRIA STEAK FAJITA MEAT

1 bottle Sangria
4 cloves garlic, minced
1 Tbl. salt
1 Tbl. Pepper
2 lbs. Skirt Steak
Season the steak and rub down with salt and pepper and place in a gallon Ziploc. Toss in garlic and pour enough Sangria to completely cover the meat. Let marinate 4 hours or overnight. When ready to grill, take the steak out of the marinade and let it rest and come to room temp. Grill the meat for about 3-4 minutes on each side or until medium rare. Let rest for 10-15 minutes before serving. Be sure to slice against the grain to make the meat tender. Serve with all of your favorite fajita fixings! (One note… the meat will be purple, but that’s OK… the color will be normal after it is grilled.)

CORN SALSA DIP

1 can sweet corn kernels, drained
1 can shoe peg corn, drained
1 can black beans, rinsed and drained
1 can Ro-Tel tomatoes with all juice
2 avocados, diced
1-2 jalapenos, seeded and diced fine
1 large lime
1 tsp. cumin
1 tsp. chili powder
Pinch salt
Nuke the lime in the microwave for about 15 seconds to release all of the juice. Place diced avocado in large mixing bowl, then squeeze lime over avocado. Add in all remaining ingredients, mix well and taste and adjust seasonings if need be. Cover and refrigerate for a couple of hours before serving.

MARINATED GRILL SHRIMP

3 cloves garlic, minced
1/3 cup olive oil
1/4 cup tomato sauce
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 pounds fresh shrimp, peeled and deveined
skewers
In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice.
Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.

EASY BAR-B-QUE CHICKEN

2 pounds chicken pieces
1 or 2 cloves garlic, minced
Red pepper flakes
Salt and pepper
Wash chicken and dab dry with a paper towel, then season with salt, pepper, pepper flakes and minced garlic.
Clean the grill off with a grill brush and a towel, and lightly brush with olive oil to keep chicken from sticking. Heat grill on a medium-low setting for 5 minutes.
Grill chicken, skin side up and with grill top down, for about an hour to an hour and a half, turning occasionally. Chicken is done when meat is fork-tender and juices run clear. At the last minute, baste chicken with barbecue sauce, turning once to allow sauce to “dry.” Take off grill immediately, and serve with side of barbecue sauce. Serves 6.

SEAL TEAM 6

Glass, cup can, anything that holds liquid.
Ice
2 shots of liquor (any brand)
Splash of water
Repeat until liquor runs out.

Yummy Three Layer Strawberry Dessert

2 cups pretzels, crushed
1/2 cup butter, melted
2 tablespoons sugar
8 ounces cream cheese, softened
8 ounces Cool Whip
1/2 cup sugar
1 (6 ounce) box strawberry jello
1 (10 ounce) package frozen strawberries
Preheat oven to 400 degrees.
Bottom Layer - Mix together first three ingredients for the bottom layer. Place in a 9 x 13 dish and bake for 8 minutes - Cool.
Middle Layer - Mix together cream cheese and sugar, fold in cool whip. Place on top of cooled bottom layer. Place in refrigerator.
Top Layer - Follow directions to Jello and add strawberries to Jello. Place in refrigerator to set a bit. Once it has started to set, (you do not want this watery) remove pretzel dish from refrigerator and top with Jello and strawberries.
Cool until completely set - 1-2 hours.Serve with additional whipped cream.
